I’m beginning to learn that spending a great deal of time swimming, biking and running are only three parts of triathlon training – and there are more then three parts. (who has the energy to do all this?!)
From what I hear, it’s a good idea to eat healthy too. I was hoping to be able to sustain my training only with ice cream and margaritas (or margarita ice cream), but unfortunately, I’m starting to find these two major food groups aren’t powering my workouts as much as you would think. There goes my Margaritaville sponsorship!
Anyway, I was in a hurry to get out the door for work Friday morning so I just grabbed a bunch of stuff from the fridge to eat during the day… and I accidentally made myself one of the best salads I’ve ever eaten.
Here’s what was in it:
- About a cup of spinach
- 1 medium tomato
- 1 slice of fresh, part-skim mozzarella, chopped up
- 1/2 avocado chopped up
- 1 mini can of tuna packed in water
- Drizzle of olive oil and a tiny splash of balsamic vinegar
- Sea salt, pepper, and oregano to taste
